The first thing that I would recommend that you do, is go to the Practice Paper Piecing Page.  When you feel comfy with paper piecing, come on back and try a Pineapple Star! You will need to print out four copies of the template page per block you want to make on very lightweight paper. Fat quarters should be plenty! You also need one 2-1/2" center square!

After your units are paper pieced, lay them out as shown with the extra 2-1/2" square as the center. Sew three horizontal rows, and then join the rows to finish your Pineapple Star Block!

Here on its side is a quilt of four blocks by five, with plain and pieced borders!

As Always, Happy Quilting!
